Simple salad that my kids are happy to eat. Generally if they eat the ingredients happily on their own, then when I combine in a salad, they eat it without issues.
Ingedients:
Cucumber
Baby spinach
Grilled chicken slices
Capsicum pesto (recipe to follow)
Balsamic vinegar drizzle
